“A collection of good things since 1979.” Cibrèo is the iconic restaurant in Sant’Ambrogio that has turned the concept of traditional cuisine into a cult. It was named after an ancient dish from Florentine tables, symbolizing a way of dining that was almost revolutionary at the time. This is when the idea of a kitchen focused on short supply chains, always in tune with the seasons, was born. And it remains that way today.

From the Potato and Ricotta Flan to the Tagliolini Timbale, including the Stuffed Pigeon with Mustard, not forgetting the Cibrèo Platter or the divine Cheese Tart with Bitter Orange Marmalade. Cibrèo’s signature dishes are beloved and define the cuisine of this restaurant as a perfect blend of tradition and the personal, eclectic inventiveness of the brilliant Fabio Picchi.
Story
Fabio thought he would become a journalist. Instead, in 1979, at just 24 years old, he opened this restaurant with its sober elegance of decor and passionate culinary tradition… so passionate that it was countercultural! Over the years, it has become a stronghold of prophetic defense of the precious and ecologically ethical use of raw ingredients. Today, it is part of the history of Italian cuisine.
